In the true spirit of Fat Tuesday, I am using butter. Like… a lot of butter. I’m making my ultra decadent, uber fattening, ridiculously rich version of this already outrageous southern dessert. I wanted to up the ante by doubling the butter and adding sour cream. This is special occasion food, people. This isn’t meant to help you eat your feelings. Though, if your feelings are hurt, this cake will help. Just sayin’.
You will need the following:
Crust
- 1 package yellow cake mix
- 1 egg
- 1 stick salted butter, melted
Filling
- 1 8-ounce package cream cheese, softened
- 1/8 cup sour cream
- 1 stick salted butter, melted
- 2 eggs
- 2 cups, not packed powdered sugar
- 1 tsp vanilla
Directions:
- Preheat oven to 300 degrees F.
- Combine the cake mix, egg, and butter and mix well with a spoon. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.
3. In a large bowl, use an electric mixer to beat the cream cheese until smooth. Add the eggs and vanilla and beat together.
4. Next, add the powdered sugar and mix well. Pour over cake batter, spread evenly and bake for 40 to 50 minutes. Make sure not to over bake as the center should be a little gooey. It should jiggle in the middle but look dry around the edges.
Cut this “cake” into small pieces. It nearly qualifies to to classified as a bar but it’s a bit messy for finger food. I may or may not have eaten several pieces with my hands, though.
