Mindful Monday and a Spicy Green Smoothie

So, you all remember the Fritaffle, right? Well, I went to town with that thing! I had it for breakfast everyday for weeks! I would switch up the ingredients, but eventually I needed a change. I decided a smoothie was in order. I’ve been making it for The Rock Star and I for a couple weeks now. I love it so much, I needed to share it with you!

Like the title suggests, it’s spicy! I have been loving the hatch chile as of late and have juiced a TON of them! When their season is over, I will substitute with jalapeños instead. If spicy isn’t your thing, no worries! Just leave it out. This smoothie is delish without the kick as well! This recipe is enough for two large smoothies, about two cups each.

You will need the following:

  • 2 cups fresh spinach, packed
  • 1 cup fresh or frozen mango chunks (pineapple was great too!)
  • 1/2 cup greek yogurt, plain or vanilla if you want it a bit sweeter
  • 1/4 cup water or juice
  • 1/8-1/4 cup hatch chile juice (use jalapeños as a sub)
  • Ice, optional

Directions:

Place all ingredients into a blender and blend until smooth. Add ice as needed. I like mine to be cold and thick so I add quite a bit.
