Listen, the Crock-Pot needs to be a staple in the lives of busy families everywhere! Not only does it provide a means to a delicious meal with minimal effort, but you can make a lot at one time which makes for easy meal prep! This weeks meal prep is the tortilla-less burrito! All of the deliciousness of a burrito in a salady bowl. Of course, you can make this into an actual tortilla’d burrito. I’m not the boss of you!
This is a Mindful Monday post because by cooking in this manner we are taking care of ourselves and those we love by providing healthy sustenance without killing ourselves in the process. The goal is to get more people in the kitchen. Trust me, the food we get from outside of our homes is directly affecting our health and likely causing a variety of cancers and health issues that we can avoid by taking matters into our own hands and deciding that we are worth it. We do not have to buy into a cheeseburger lifestyle. I am not preaching “fat” to you. I am, instead, preaching “fake” to you. We can’t keep allowing fake foods to rule the world. There is just too much at stake. So, now that I’ve gotten all Debbie Downer on you, go to the kitchen with joy in your hearts and make delicious food! Real food with real ingredients that came from dirt.
You will need the following:
- 2 lbs beef stew meat (sub with chicken if you like)
- 1 12oz jar of salsa
- burrito fixins
Directions:
- Place frozen stew meat in the Crock-Pot with the salsa and set it on low for 8 hours.
- Serve with favorite burrito ingredients.
My fixins included arugula, avocado, black beans, corn, cheese and cilantro lime rice. To make the rice, prepare long grain white rice as you normally would but replace half the water with chicken stock. Once cooked, add lime juice and fresh cilantro to taste. My measurements were 2 cups rice, 2 cups water and 2 cups chicken stock. Then I added 1/4 cup lime juice and 1/2 cup chopped cilantro.
