Limoncello Dessert “Shooters”
Let me begin by saying that these are “shooters” only in the sense that they are served in a shot or cordial glass. They will be eaten with a small spoon.
I love limoncello! So much so, that a shot (or two) would be completely sufficient as dessert as far as I’m concerned, but maybe we can wait until later in this book to really take a dip in debauchery.
This dessert is so simple to make. You will need the following:
Limoncello (optional, I know “gasp”, right?)
Lemon curd, homemade or store bought
Whipped cream topping, 1 tub or 4 cups
Graham crackers
Butter, half a stick melted
Take 8 squares of graham cracker and place in a ziplock bag. Evenly smash them with a rolling pin or a highball glass (yay multi function!). Once your crackers are sufficiently pulverized, add the melted butter and smoosh together with your fingers until moistened. Distribute evenly in the bottoms of 8-10 shot glasses and tamp them down with the butt of a butter knife.
Next, add one 6oz jar of lemon curd to a mixing bowl. Add two cups of your whipped topping, 1/4 cup limoncello and beat together until combined. Spoon or pile into shot glasses directly on top of your cracker crust.
Top with a dollop of the remaining whipped topping and garnish with a small square of graham cracker. Voila! A perfectly beautiful and decadent dessert that will not leave your girls feeling too full.
